Whey with high pollutant qualification are produced in wastewater generating from the dairy industry as the biggest source of pollution and as a result of cheese production. In short, 90 kg of 100 kg milk processed for cheese form whey. When taking into consideration the fact that 40.000 tons of cheeses are produced per year in our country, 360.000 tons of whey is comprised. In this case, this kind of wastewater that can be released to receiving environment as considerable amount of food waste and without purification causes environmental pollution.
Many small businesses, in order to utilize the whey, obtain curd cheese by boiling this water; however, the economic value of the product is relatively limited. Only 1.5% of whey are taken as curds. However, the rate of whey solids is 5.5 to 6.6%. After the curd collection process carried out by the small businesses, wastewater occurs again; therefore the pollutant effect cannot be resolved. In the process of pulverization, wastewater does not form as the water is completely evaporated and therefore it carries a great importance in terms of the prevention of environmental pollution.
The demineralization of whey is expensive as it is a material with high acid and fat rate. It is economically complicating to have the infrastructure required for demineralization as most of the plants that are engaged in dairy operations are small businesses and therefore most establishments prefer to give the water directly to the receiving environment rather than building a treatment facility.
At this point, MAYBI took the load from the small businesses by collecting whey from dairy farms in various areas upon itself under difficult conditions since 1993.
Although investments are made in order to utilize these kinds of wastes are supported in European countries such as the Netherlands, Italy and France, such support is not available in Turkey, however, MAYBI serve the consumer and the economy by producing the waste as an additive.
It has also been possible to utilize this important waste in different industries by pulverization. Although the importance of whey powder was discovered late in the food industry, it began to be used in a number of fields within the food industry once its nutritional and functional value has been discovered. MAYBI whey powder is used as filling material for products such as confectionery, bakery products, baby foods, meat products, soups, sauces, drinks and as animal feed by replacing milk such as calf feed. In many countries, it has been used as whey protein beverage within the beverage industry by adding fruit flavors. In addition, specially processed whey is used in the production of chocolate and ice cream.
